Even if I weren’t pregnant—and even if I could consume all the frozen margaritas I desired—I’d be lying if I acted like Cinco de Mayo (or any Mexican dinner night) wasn’t about the glorious, flavorful food.
This pregnant, food-obsessed woman can’t wait to bite into a crunchy taco shell and slather homemade guacamole (with extra cilantro!) on every single inch of her naked…tortilla chip. (Let’s keep this PG.)
My 23rd birthday at Sabor À Mexico, where many actual margaritas were consumed
Nevertheless, tonight’s meal just won’t be complete without a frothy beverage, so I’ve come up with this tropical, fruity drink that we pregnant women (and our supportive husbands or designated drivers) can enjoy.
Basically it’s just a smoothie dressed up in festive attire, but who cares?
Virgin Mango Lime Margaritas
serves 2 (+ some extra for topping off)
Ingredients
- 1 can lemon sparkling water (I used La Croix)
- 1 bag (16-oz) frozen mango chunks
- the juice of 1½ – 2 limes
- 2 tsp agave nectar
- ¾ cup orange juice
- handful of ice (+ more as needed)
Directions
- Add all ingredients to a high-speed blender, and blend, baby, blend!
- Pour into your finest margarita glasses and serve immediately.
(If you’d like, you can first coat the glass rims with lime juice and dip in sugar or salt, but I’m just not fussy that way and am fine going au naturel when possible.)
These were the perfect accompaniment to our dinner—and I imagine they’d be even better with some tequila added. Next year, friends, next year…
